Pumpkin Chocolate Chip Protein Muffins

Try these delicious high-protein, low-carb, gluten-free pumpkin chocolate chip protein muffins! They are less than 120 calories and perfect to satisfy your sweet tooth!

Makes: 12 muffins

Ingredients

1 cup old fashioned rolled oats
1 cup pumpkin puree
1 cup Greek yogurt
2 large eggs
2 scoops Ryno Power Vanilla Protein
1 ½ teaspoon pumpkin pie spice
1 teaspoon baking powder
½ teaspoon baking soda
½ cup dark chocolate chips (optional)

Instructions

  1. Preheat oven to 350 F.
  2. Add the oats to a blender or food processor and process until a flour forms (10 seconds).
  3. Add the pumpkin, Greek yogurt, eggs, protein powder, pumpkin pie spice, cinnamon, baking powder, and baking soda and blend until well combined.
  4. Stir in chocolate chips.
  5. Separate into 12 muffin cups or a greased muffin pan.
  6. Bake for 20 minutes or until a toothpick comes out clean.
